Poblano Peppers Stuffed with Ham and Cheddar

If you are trying to avoid carbs but are craving the comfort of a ham and cheese sandwich, take away the bread and stuff a mixture of ham and cheese into a slightly spicy poblano pepper. Yum.

Ingredients:

6 large poblano peppers

1 egg

1/2 cup of sour cream

1/3 cup of bread crumbs

2 cups of shredded cheddar cheese

1 cup of chopped ham

Preheat oven to 375 degrees.

Wash and carve a hole on the side of the poblano pepper that is facing up as it rests on a surface.  Empty the seeds and create a pocket for stuffing the mixture.  (Leave some of the seeds inside the pepper if you like it slightly spicy.)

Combine all other ingredients.  Stuff mixture into each pepper and place the peppers in a 9 by 13 inch greased pan.  Cover with foil and place in the oven for 30 minutes.  Remove foil.  Turn oven to 425 degrees.  Put peppers back in the oven for another 10 minutes, or until the cheese starts to brown.
