No matter what I create in the kitchen, it seems like my kids still love the classic box of mac & cheese. So you can only imagine how happy they were when I figured out a way to make that box mac & cheese portable for their school lunch boxes! Bye-bye boring peanut butter and jelly.
Ingredients:
1 box of mac & cheese dinner (Kraft Mac & Cheese)
2 Tbsp of butter
1 Tbsp of flour
2 oz of cream cheese
1 egg
1 cup of shredded cheddar cheese
3 strips of crisp, crumbled bacon
Directions:
Preheat oven to 400 degrees.
Melt butter over medium heat in a large saucepan. Add flour and stir until thickened. Add milk and the cheese packet from the box. Stir until creamy. Add cream cheese. Remove from heat.
Meanwhile, cook the pasta from the box according to directions. Drain and rinse.
Pour pasta into the saucepan with the cheese. Add egg and 1/2 cup of shredded cheddar cheese. Stir to combine.
Scoop mixture into a well greased muffin pan. Top with remaining shredded cheese and crumbled bacon. Bake for 10 minutes at 400 degrees. Cool completely before removing.
