Stuffed Potato Skins

Game on!  Stuffed potato skins.  These make not only make great game day food, but they can satisfy a hungry crowd.  Baked, fried and then loaded with cheese and bacon, these potatoes are fun for a crowd to then top with their choice of condiments like sour cream, lettuce, tomatoes and salsa.  Set up a topping bar and let your guests help themselves.

Ingredients:

12 baked potatoes, cooled

3 cups of shredded cheddar cheese

1 lb of bacon, cooked and crumbled

5 green onions, sliced

6 cups of vegetable oil for frying

Variety of toppings like sour cream, shredded lettuce, tomatoes and salsa

Directions:

Slice cooled baked potatoes in half.  Scoop out the center of each half, leaving at least a 1/4″ border of potato all around.

Meanwhile, bring a pot of vegetable oil to a boil.  When a thermometer reaches 350 degrees, drop 2 or 3 skins at a time and cook for 3-5 minutes or until golden brown.  Drain and let cool.

Place 1 Tbsp of cheese on top each half.  Sprinkle with bacon and green onions.  Place in a 400 degree pre-heated oven for 2 minutes or until the cheese melts.

Place on a large platter and serve with sour cream.
