Crispy Turkey Nachos

Ingredients

1 13 oz bag of corn tortilla chips

2 cups of cooked shredded turkey

1/4 cup of oil

2 cans of refried beans

3 Tbsp of water

1 16 oz package of Velveeta Cheese, melted

1/2 head of iceberg lettuce, shredded

1 16 oz jar of salsa

2 jalepenos, chopped

1 8oz package of sour cream

1 large tomato, diced

Cilantro, chopped

Over high heat, warm oil in a large skillet until it starts to smoke.  Add turkey.   (You should hear the turkey sizzle as it hits the oil.)  Allow the turkey to crisp before stirring it.  When crisp on all sides, remove from heat and set aside.

Place tortilla chips onto a large platter.  Pour melted cheese over the top.  Continue to build the nachos with beans, turkey, salsa, lettuce, sour cream, tomato, jalepenos and cilantro.

Ingredients

1 loaf of Italian bakery bread, sliced

1 lb of thinly sliced cooked turkey

1 lb of deli ham

1/4 cup of cranberry sauce

3 Tbsp of raspberry jam

14 slices of swiss cheese

butter

4 eggs

1 cup of milk

non stick spray

1/2 cup of powdered sugar

Prepare cran-raspberry spread by combining cranberry sauce and raspberry jam in a small bowl.  Set aside

Butter one side of each piece of bread.  Build the sandwich, butter-side down, as follows: cram-raspberry spread, turkey, ham, cheese.  Top with with a slice of bread, butter-side up.  Pre-heat a skillet and add non-stick spray.  Meanwhile, beat egg and milk together.  Place the sandwich in the egg mixture, coating both sides.  Transfer to the hot skillet and cook about 3 minutes, each side, or until crispy.  Remove from skillet.  Cut in half.  Sprinkle powdered sugar on all sides.  Serve.
