Steak Fajitas

Ingredients

2- 12 oz grilled sirloin steaks, cut into thin pieces
1- green bell pepper, sliced into thin strips
1 – yellow bell pepper, sliced into thin strips
1 – red bell pepper, sliced into thin strips
1 – yellow onion, diced
1/2 cup of vegetable oil
2- limes, juiced and zested
2 cloves of garlic, minced
3 Tbsp of cumin
6 Tbsp of chili powder
1 tsp of cayenne pepper
3 Tbsp of soy sauce
1/2 tsp of salt
1/2 tsp of black pepper

Prepare the fajita marinade by mixing together the oil, lime juice, lime zest, all spices and soy sauce. Submerge the steak in the marinade and let sit for 30 minutes.

Meanwhile, slice the peppers and onions. Cook the vegetables for 3 minutes over a high heat with 2 Tbsp of oil. Add the meat and the marinade. Continue to cook until 2 more minutes.

Serve with warm tortillas, shredded cheese, lettuce and sour cream.

Steak with Garlic Horseradish Crust

Ingredients

4- 12 oz Sirloin Steaks (divided into 6 oz portions)
1/2 cup of Panko breadcrumbs
1/4 cup of prepared horseradish cream
3 cloves of garlic, minced
2 Tbs of Worcestershire Sauce
1/4 cup olive oil
Kosher salt
Ground Pepper
Mix together olive oil, horseradish cream, garlic, 2 Tbsp of Worcestershire Sauce and Panko bread crumbs. Mix and set aside.

Preheat oven to broil.

Meanwhile, pre-heat the grill on high heat. (High heat is necessary in order to sear the steaks and give a nice crust to the outside, while keeping the inside of the steak juicy.) Rub steaks with olive oil, salt and pepper. Grill 5 minutes on each side for medium rare, about 135 degrees.

Remove steaks from grill and place in a baking dish. Top immediately with horseradish mixture and put under the broiler for 2 more minutes or until crust is brown.

Let steaks rest before serving.
