Chicken Cordon Bleu

Chicken Cordon Bleu- a classic French dish that represents chicken stuffed with swiss cheese and ham. Dip it in a breading, brown it on all sides and then finish it in a 350 degree oven for 20 minutes.

6 boneless, skinless chicken breasts

6 slices of swiss cheese

12 oz of thinly sliced ham

2 cups of flour

3 eggs

2 Tbsp of water

4 cups of panko bread crumbs

salt and pepper to taste

2 Tbsp of oil

Begin by using a pairing knife to slice a slit in the side of each breast.  Cut deep enough to open a “pocket” in the center of the breast, but be careful not to cut through the breast all the way.

Place a slice of cheese and a few slices of ham inside the pocket.  Gently press the chicken breast back together.

Prepare three dishes, one with flour (seasoned with salt and pepper), one with beaten eggs and water and one with panko breadcrumbs.  Take each stuffed chicken breast and dredge it in the flour followed by the egg and breadcrumbs.

Heat a large skillet with oil.  When the temperature shows that the oil is starting to smoke, add the chicken breasts.  Brown on all sides.

Remove from skillet and place in a casserole dish.  Cover with foil and bake at 350 degrees for 20 minutes.
