Oven-Baked Oatmeal

Wake up Sunday morning to the smell of cinnamon, brown sugar and vanilla with one of my favorite breakfast recipes- Baked Oatmeal. Cut a slice into a bowl and top with milk, raisins, toasted walnuts, whatever you have on hand. Delicious!

Ingredients:

3 cups of rolled oats

1 cup of brown sugar

2 tsp of cinnamon

1 tsp of salt

2 tsp of baking powder

4 egg whites

1 cup of milk

2 tsp of vanilla

1 Tbsp of vegetable oil

Preheat oven to 350 degrees.  In a large bowl, combine dry ingredients.  Separately, whisk egg whites and milk, then add it to the dry ingredients.  Add vanilla and vegetable oil.  Stir thoroughly.

Spoon mixture into a greased baking dish.  Bake 30 minutes or until the top starts to brown.  Enjoy with your favorite toppings.

Oven Baked Salmon with Stir-Fry Vegetables

Summer is here. Eat lighter. Eat healthier. Spend less time in the kitchen. Here’s a great salmon recipe that does it all.

Ingredients:

1 1/2 lb filet of salmon

2 Tbsp of mustard

1/4 cup of brown sugar

1/4 cup of soy sauce

1 head of bok choy, sliced

2 cups of snow peas

12 oz of mushrooms (shitake and oyster)

1/4 cup of vegetable oil

2 Tbsp of salt

4 cloves of minced garlic

Begin with marinade:

Combine mustard, brown sugar and soy sauce in a large bowl.  Add salmon.  Cover and chill for 2 hours.

Preheat oven to 425 degrees.  Mix bok choy, snow peas, mushrooms, garlic, oil and salt together.  Spread evenly on a large sheet pan.  Roast 20 minutes.

Remove from oven and place marinated salmon on top of the vegetables.  Return pan to the oven and continue to cook 10 more minutes.

Serve with brown rice.
